Wanna Have Your Cake & Eat it Too? 😉
If you’re like us, you can’t go to bed without a little treat, and unfortunately those little treats can add up. Which is why it’s so great to have healthier alternatives! These High Protein Chocolate Peanut Butter Bombs are a great way to curb your sweet tooth without having to feel quite so badly about eating them! The best part? you only need 3 ingredients!
1 1/2 cups of powdered peanut butter (PB Fit or PB2 for example)
1/3 cup of unsweetened applesauce (or a 4oz applesauce)
1/2 cup of chocolate chips melted with 1tsp of coconut oil (can use dark chocolate or dairy free chocolate to make it vegan!)
All you need to do is!…
Mix 1 1/4 cups of your powdered peanut butter in with all of the applesauce
Check the consistency and add more powdered peanut butter if needed (the more you add, the more fudgy the texture)
Divide the dough into pieces and roll into balls (If your filling doesn’t want to hold shape you can always refrigerate it for an hour or two to help firm the dough)
Once shaped, cool in fridge or freezer until firm
While balls cool, melt the chocolate in microwave (only microwave your chocolate chips for a few seconds at a time and stir in between to avoid burning the chocolate)
Coat the balls in chocolate and refrigerate until chocolate sets, then enjoy!
